Life is Crazy...Welcome 2009

I have not blogged in awhile. Gettin back to work, Chase gettin back to school with all new classes, and Robert has been sick. Nothing serious, sore throat, aching, light fever. Still not sure what it was. Must have been viral. He is much better and thankfully the rest of us did not get it. We made sure and stayed away from Toot's. I went 7 days without seeing her and it was tough.


She said her first sentence and it had the word "Paw Paw" in it. Kelly was getting her out of bed and telling her that Daddy would be home soon and they were goin Bye Bye. She looked at Kelly and said "Go See Paw Paw"???? She figured if we are goin somewhere I would like to make a suggestion as to where we are goin. She loves Robert so much. I used to be her favorite.. Now I walk in the door at her house and she gives me a quick smile and looks behind me to see if Robert is there!!! If he's not it's like Ok, I guess you will do!!!

I did not have time to do my Menu Plan this week. We have come home everyday askin, What's for supper(if I did not stop on the way home and pick up something)?. I am goin to try to plan this week. It is goin to be another busy week. I did manage to get my laundry done early so I don't have to deal with that.

We may grab Mom and go to Corinth and eat BBQ at Rib Shack!! They have such good food. The man that owns it was in the Restaurant Business with us in 1981. So we have known him for a long time. He also owns a Restaurant in Booneville, MS called Catfish Country. We have not been there to eat yet. It is on Hwy 45 and we have passed there goin to visit Robert's mom and the parking lot is always full if they are open.

Kelly, and Coconut Pie!!


Here is one of Robert's Christmas gifts from Kelly. She called and was wanting to know what to get him for Christmas and he is so hard to buy for. He is not hard to please but he is wanting things that he really needs to pick out himself. Stuff for his motorcycle and things that no one would know what to get him.
He mentioned that it had been a long time since he had had a coconut pie. Kelly had never baked a coconut pie before so she went all over the net trying to find a good recipe and she found one. The finished product is pictured above it is so good and I don't really care for coconut!! She said it is really easy. I don't have the recipe, but if she posts it on her blog I will put in a link!!!
She has turned into quite the little cook. We jokingly call her Kelly Crocker!!! Thanks honey, your Dad said it is Yummy.(however he told Chase it was just awful, hoping he would not eat any of it:o)

Bell's was Great and so was Mom's Doc's Visit!!


Mom's Doc appointment went well. She is doin good. She has to go to Lexington in the morning for a Echo Cardiogram. She has not had one in a year and the doc says it's time. Then she has a follow up with Doc in Savannah around the end of April.(just routine)


We stopped at Bell's for lunch and had a Hamburger and Fries. We tried their Onion Rings for the first time today and they are really good too. Mom said it was one of the best burgers she has ever had.


The Burgers there have been written about in Magazines . They have been in business since 1954. It is on the way to Jackson and a great place to eat. They say they sell almost as much BBQ, but we have not tried it because the burgers are just too good.

MY CHRISTMAS CASSEROLE (A FAMILY TRADITION)



BREAKFAST CASSEROLE

1 pound sausage(browned and drained)

6 slices bread,crust removed

1 1/2 cups shredded cheddar cheese

8 eggs

1 teaspoon salt and pepper

2 cups Half & Half(you can use milk)

1 teaspoon dry mustard



Brown sausage, drain. Layer bread in bottom of 9 x 13-inch well-greased baking pan. Sprinkle sausage over bread. Add cheese. Beat eggs and mix with salt, mustard, and Half and Half. Pour slowly over cheese. Refrigerate overnight. Bake at 325 F. for 45 minutes. Serve hot with jelly.
We will usually have country ham, chocolate gravy and biscuits with this also.
*Be sure and don't put a glass dish in a hot oven!!!! I let it set on the counter a few minutes before I put it in the oven.
*This freezes very well after it is cooked!!

Kelly's Apple Crisp!!


My sweet daughter brought us some Homemade Apple Crisp last night and it was fantastic. It had just come out of the oven and was soo good. I think she got the recipe off of the Food Channel. I would have posted a picture but it did not last that long!LOL
Thank you honey for thinkin of Mom and Dad. Especially when I was not feeling well.

SUPER SLOPPY JOES!!!!


This is the sauce I use for my Sloppy Joe's. However, after I fix per the directions on the can. I spoon onto the Buns and top with Swiss Cheese or any other you might like, I wrap them in foil and put in the oven to heat and melt the cheese. Maybe 5 or 10 minutes. I already have the oven on, because when I make this I bake Ore Ida crinkle cut fries in the oven. So I time it so the sandwiches and fries come out of the oven at the same time. They are very messy to eat but OH so good. If you toast the buns first they are not as soggy.

Great Recipe!!!

I tried a new recipe tonight and it was wonderful. I would have added a picture but there is none left and I did not realize how good it was until we had eaten it all.

BEST BBQ ANYWHERE!! "RIB SHACK"




There is a BBQ Restaurant in Corinth MS, that has the best BBQ. (It's worth the drive) It doesn't matter if you want pulled pork or ribs. The ribs are a dry rub and they have a great flavor, but not messy.. The sandwich of pulled pork is great. I don't know what it is about it but it is so good. They also have slaw, baked beans and they have Crinkle Cut fries or "Home Fries" these are "REAL" potatoes that have been cut and deep fried. They have BBQ sauce, Ketchup, Hot Sauce and a Roll of Paper Towels on every table. There are two Flat Screen TV's with the Closed Caption turned on so you can catch up on new or sports or whatever. Almost every time we go there are several Motorcycles there and they will have tags from places like Kentucky, Alabama, Tennessee, and lots of other places. It is a clean and family friendly environment. They have bulletin boards on the wall and you can bring pics of your kids, grand kids or what ever and put on the boards. The people are so friendly.



They also have Hamburgers, smoked chicken, they also have something called a Pig Salad. There desserts are homemade. The strawberry cake is soo good!!



This restaurant is located on Highway 72 right behind Pizza Hut. It is pretty far back off the road and could be easy to miss. For excellent BBQ you need to give it a try!!!

MILLION DOLLAR COOKIES

I just saw this recipe on Leno. The woman Carolyn Gurtz entered the Pillsbury Baking Contest and won a Million Dollars with this recipe.

DOUBLE DELIGHT PEANUT BUTTER COOKIES

1/4 cup Fisher® Dry Roasted Peanuts, finely chopped

1/4 cup Domino® or C&H® Granulated Sugar

1/2 teaspoon ground cinnamon

1/2 cup JIF® Creamy Peanut Butter

1/2 cup Domino® or C&H® Confectioners Powdered Sugar




1 roll (16.5 oz) Pillsbury® Create ‘n Bake® refrigerated peanut butter cookies, well chilled






DIRECTIONS

1. Heat oven to 375°F. In small bowl, mix chopped peanuts, granulated sugar and cinnamon; set aside.

2. In another small bowl, stir peanut butter and powdered sugar until completely blended. Shape mixture into 24 (1-inch) balls.

3. Cut roll of cookie dough into 12 slices. Cut each slice in half crosswise to make 24 pieces; flatten slightly. Shape 1 cookie dough piece around 1 peanut butter ball, covering completely. Repeat with remaining dough and balls.

4. Roll each covered ball in peanut mixture; gently pat mixture completely onto balls. On un greased large cookie sheets, place balls 2 inches apart. Spray bottom of drinking glass with CRISCO® Original No-Stick Cooking Spray; press into remaining peanut mixture. Flatten each ball to 1/2-inch thickness with bottom of glass. Sprinkle any remaining peanut mixture evenly on tops of cookies; gently press into dough.

5. Bake 7 to 12 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Store tightly covered.


I thought I would post this recipe so my sweet daughter Kelly "Crocker" might bake some and bring a few to her poor, pitiful underfed Daddy!! LOL I bet he would buy the ingredients even.

SUPPER TIME!!

Supper time around here is sometimes quick and easy and sometimes we have time to cook. This was one of those cookin' days.. The roast was cooked in the Crock Pot. Brown a roast put it in the crock pot with one can of cream of celery soup and a chunked up onion and turn it on. It is that easy. The tomatoes were good and fresh and the slaw was just as easy.

EASY SLAW

Bag of Cabbage
Mayo
Salt
Pepper
Sugar

Pour it all in a large zip lock bag, and knead the bag. No mess to clean up and no bowl to wash. You can store the leftovers right in the bag. The kids could do this!!!



There are lots of days I don't have time to cook, so the Crock Pot is my friend. But then again so is Peanut Butter, Jelly and Bread :-]
